Product Review: 9″ Caramel Apple Spice Cake from In The Mix Bakery
Last year, I kept a friend company at an event she was tabling, when we were offered some of the moistest, most flavorful cupcakes I’d ever tasted. I was so impressed that I tracked down the baker, in November, because — at the last minute — I’d decided to make a semi-big deal out of my birthday. For me, that simply meant celebrating it beyond being taken to dinner. Eleven days before my birthday, I’d planned the menu, sent invitations, and ordered a cake from Ms. Jeralyn.
I was lucky to have the company and gifts of a handful of folks who wanted to see me happy. Even more, I was a little too lucky to have Jeralyn’s caramel apple spice cake (but these thighs probably wouldn’t agree).

When I found Jeralyn, I called her and discussed my needs. She quoted a price and gave me a pick-up address. When I got to the address, she came out with the cake all boxed up, she accepted her money, and that was it. She may accept Paypal, but I didn’t ask because I didn’t want her to lose any money paying Paypal fees.

Jeralyn listened to me and made suggestions, based on how many folks I thought would arrive. When I met her to get the cake, she made sure that I opened the box to look at the cake; I was about to hop in back into my car and just leave. Jeralyn was kind, without being syrupy sweet. I don’t like syrupy sweet.

At first, I was disappointed with the cake because it was so sweet, but it was also very cold, which I think heightened the taste of sugar. I’d forgotten to take the cake out of the fridge the night before. If you know me, you know that I like to eat, so I was determined to let the cake reach room temperature so that I could really taste it. Over the course of several days, I managed to finish the entire cake. It took about two days to reach room temperature, but it was still really sweet. By the time I’d gotten down to the last few slices, the sweetness had subsided. I’m no sure if that’s because my taste buds had become desensitized to the sweetness, or if the sweetness had subsided as the temperature of the cake rose. There’s one thing that remained unwaiveringly sweet: the icing. For me, a little less sugar could’ve been used.

The box folded out to make cutting easy. The cake didn’t fall apart, either, when it was cut.
